This recipe is awesome for a great vegan pie crust but it also works well with adding vegan chocolate chips and forming into dough balls. Cook them as cookies or just enjoy them raw.
¾ cup rolled oats
¾ cup rolled oats
¾ whole wheat pastry flour
½ cup pecans
½ teaspoon ground cinnamon
pinch of salt
¼ canola oil
3 tablespoons maple syrup
Preheat oven to 375 degrees. Lightly oil 9-inch pie pan and set aside.
Combine the oats, flour, pecans, cinnamon, and salt in a food processor or I use my Vita-Mix, which works great. Pulse until the mixture resembles a coarse meal, scrap down sides as needed. Transfer to a bowl.
Whisk together the oil and maple syrup. Pour the liquid into the dry ingredients and blend thoroughly with a fork until the mixture forms a soft dough.
Transfer to the pie pan and press the dough into the pie pan. Bake for 10 minutes.
