I found this recipe online and loved it. We really love quinoa at our house and this is a fantastic way to enjoy it for breakfast.
1 cup soy milk
1 cup water
1 cup quinoa
1 cup berries, blueberries or blackberries
½ teaspoon ground cinnamon
1/3 cup chopped nuts, walnuts or pecans toasted
4 teaspoons agave nectar
Combine soy milk, water and quinoa in a medium saucepan, Bring to a boil over high heat. Reduce heat to medium-low: cover and simmer 15 minutes or until most of the liquid is absorbed. Turn off heat; let stand covered 5 minutes. Stir in berries and cinnamon. Top with toasted nuts and drizzle agave nectar over each serving.
We really liked this and are definitely going to make it.
