You can find this basic recipe idea easily on the web, but just in case you haven't come across it before, it is yummy enough to repost here.
1 bag of shelled edmame
a big handful of craisins
a little olive oil
a couple handfuls of crumbled queso fresco or feta cheese
salt and pepper
Boil the edmame for a minute or two and drain. Mix the ingredients to taste.
