ginger tofu

This is an excellent recipe to go with stir fried veggies on a bed of brown rice. We love stir fries, especially because you can modify and experiment with different sauces and ingredients and change up the veggies with whatever your in the mood for or whatever is in season.

Ingredients
15oz tofu firm or extra firm

Marinade
1/3 cup tamari
1/4 cup honey
2 large garlic cloves, crushed
2 tablespoons fresh root ginger, grated
2 tablespoons white wine vinegar
3 tablespoons toasted sesame oil
1 teaspoon chili oil, or to taste

Drain and press the tofu.

Combine all of the ingredients for the marinade.

Cut tofu into ½ in cubes. In a nonstick skillet brown the tofu at medium heat. (Until it’s got a good skin – however tough you like your tofu.) Add the marinade to the skillet and mix until the tofu is coated. While stirring cook for about 5 minutes or until the sauce begins to caramelize.

Add it to your stir fry or just enjoy munching.
