greengo sauce

so, dressings & sauces of any variety are often not healthy, making you feel like you can only take a small amount. this is an awesome sauce/dressing that is healthy, yummy and has nice 'kick'. I love to have this on salad or in a burrito.

6 TBS Ranch seasoning (1 packet equals 3 TBS--and I've found that Hidden Valley is the best)
1 lb silken tofu (drained, but not pressed)
2 bunches of fresh cilantro
4 garlic cloves
3 tomatillos (when I didn't have tomatillos, ok ok.. it was actually because I didn't know what they were, I used 2 roma tomatoes--which makes the sauce more red/green) It is excellent with tomatillos if you can get them--makes it a true green-go color.
1/2 tsp cayenne pepper
milk (or soymilk) -use as much as you want, depending on if you want it to be more like a sauce or a runnier dressing.

Throw it (literally) all into a food processor or high quality blender (like Vitamix or BlendTec) and mix well.

It should already be cold because of the tofu and milk. Serve how you want and enjoy! This should stay 'good' for as long as your open tofu would in the fridge...but mine always gets eaten before that because I keep putting it on random things.
