carmel popcorn (crunchy)

totally delicious, totally addictive carmel popcorn. we make it every christmas & sometimes for that movie where you just need a sweet treat...totally.
1 cup butter
2 cups brown sugar
½ cup corn syrup
1 tsp salt
½ tsp baking soda (put in after boiled)
1 tsp vanilla extract
5 qts popped popcorn
Cook in medium sauce pan over medium heat. Stir in brown sugar, corn syrup and salt. Stir constantly until it comes to a boil. Stop stirring and let boil for 4 minutes. Remove from heat and stir in baking soda and vanilla. Pour in a thin stream over popcorn, stirring to coat well.
Put covered popcorn on two jelly roll pans and bake in preheated oven at 250. Stir every 15 minutes for about an hour. The popcorn will be soft when it is immediately removed from the oven, it will be crunchier as it cools. If it has begun to cool and it still too chewy or soft, it is not done. (I can usually shorten the time to less than an hour and bake it at a slightly higher temperature like 275-300 and it still works great)
Let cool and store! Ahh, I mean eat!
