sunday supper scones (thanks claudia!)

my husband says these are like krispy kreme donuts...only to be devoured when it's a special occasion and... well, when you won't cry yourself to sleep from delicious guilt. yum. (shh bob, not everyone hates donuts.) seriously...a little of my peach jam (more like syrup) drizzled on the top with some plain yogurt and powdered sugar is just pure de-lish...

1 qt warm buttermilk (use regular if you don’t have buttermilk)
2 TBS yeast
2 TBS sugar
*****Let soften
2 eggs
6 TBS Oil
1 ½ tsp salt
3 tsp baking powder
½ tsp baking soda
6 to 8 cups flour
Oil (Enough to deep fry)
Mix well into a soft dough. Let rise until double in bulk.
Punch down and roll out on counter. I usually roll it to about 1 inch thick and use a pizza cutter to cut into squares. You can make them whatever shape you want. We have even made ‘donut holes’ out of these and they’re fun and yummy.
Cook in hot oil until brown on both sides. Use paper towels or paper bags to catch some of the grease.

These are also excellent with TVP chili as 'navajo tacos'.

  2. We made these this week. This is my new favorite recipe for doughnut indulgence! And, btw, I love the pics.

    We made a glaze with milk, cream, buttermilk, vanilla and powdered sugar.
