tex mex quinoa


Quinoa is an excellent source of protein and fiber. It is actually a seed.  There is a ton of fabulous way to make it up. This recipe is a favorite in my house.

2 tablespoons olive oil
2 shallots, chopped
4 cloves of garlic, minced
¼ teaspoon mineral sea salt
1 cup of quinoa, rinsed
½ cup diced tomatoes with chilies (canned)
¾ cup vegetable broth
¾ cup frozen corn, thawed
3 tablespoons fresh cilantro

Directions
1. Heat pot over medium heat.  Add olive oil and add shallots.  Cook for 10 minutes or until tender, stirring often to prevent burning and sticking. Add garlic and cook for 30 seconds more.

2. Add quinoa and salt and cook for two minutes.  Add vegetable broth and tomatoes and bring to a boil.

3. Reduce the heat to low.  Cover pot and simmer for 15 to 18 minutes or until the liquid is absorbed.  Remove from heat and add corn and cilantro.  Allow to sit covered for another five minutes.  Fluff and enjoy!

  1. Quinoa is something that I have wanted to try for a while. I am definitely going to have to try this.

  2. Ok. So, we made this for dinner tonight and I loved it. Not all the kids loved it but making something nutritious that all of them like is nearly impossible. If I get thumbs up from more than half then that is rave reviews and this one did. Yum!!
